Scampi Sashimi
Our delicate scampi sashimi is sure to delight your tastebuds! It's a beautiful balance of sweet lychee, sour lime, and spice from the chilli. The perfect quick, yet sophisticated appetiser.

Ingredients
- 2 tablespoons lime juice
- ½ small avocado, cubed
- 4 lychees, stone removed sliced into quarters
- 1 mini cucumber, thinly sliced
- 1 green chilli, thinly sliced
- 500g/1.1lbs Sanford Fishmonger Scampi, thawed
Method
- In a bowl toss together the lime juice, avocado, lychee, cucumber and green chilli.
- To prepare the scampi, carefully break off the scampi heads and using a sharp knife, split the tail down the centre and remove the stomach and intestinal tract. Remove the flesh and set aside.
Arrange the avocado, lychee, cucumber and green chilli on a serving plate and top with the scampi pieces. Spoon over the remaining lime juice. Serve immediately.
