Red Curry Mussels

Our red curry mussels are quick and easy to prepare! Featuring juicy, plump Greenshell™ Mussels in a deliciously vibrant, creamy, and fragrant sauce.

Ingredients

  • 1 tablespoon oil
  • 2 tablespoons red curry paste
  • 1 tablespoon ginger, finely grated
  • 2 cloves garlic, finely chopped
  • 1 ½ cups coconut milk
  • 1 tablespoon lime juice
  • 1 teaspoon brown sugar
  • 400-500g/14-17oz Sanford Fishmonger Greenshell™ Mussels Half Shell, thawed

To Serve

  • 1 red chilli, thinly sliced
  • 1 tablespoon coriander leaves
  • 1 lime, cut into wedges

Method

  1. Heat the oil in a medium sized pot then add the red curry paste, ginger and garlic and sauté for 1-2 minutes until fragrant. Add the coconut milk and let simmer for 2 minutes.
  2. Add in the lime juice and brown sugar and cook for 1 minute, then add the mussels and toss in the sauce, coating all the mussels evenly. Simmer for a further 4 minutes 

Remove the mussels and arrange in a serving bowl then pour over the creamy sauce. Garnish with red chilli slices, coriander and lime wedges.
