Mussels in a Rich Tomato Sauce with Spaghetti
Sweet and tender Greenshell™ Mussels in a chilli, white wine and garlic tomato sauce. Try this delicious, classic combo for an easy mid-week meal!

Ingredients
- 2 tablespoons olive oil
- 2 cloves garlic, finely chopped
- ½ teaspoon chilli flakes
- ¼ cup white wine
- 400g/14oz tinned tomatoes, chopped
- Salt and pepper
- 170g/6oz Sanford Fishmonger Greenshell™ Mussel Meat, thawed, shells removed
To Serve
- 360g/12oz spaghetti, cooked
- 1 tablespoon parsley, chopped
Method
- In a large pan, heat the olive oil then add the garlic and chilli flakes and cook over a medium heat for 1-2 minutes.
- Add in the wine and when evaporated by half add the tomatoes and salt and pepper to taste. Simmer for 3-4 minutes.
- Reduce the heat and add the mussel meat. Allow to simmer for 5 minutes until mussels are heated through.
Split the cooked spaghetti between two shallow bowls and top each with the mussels and sauce. Sprinkle with chopped parsley.
