Cooking Tips

First, thaw the scampi by placing it on a covered tray or in a sealed bag in the fridge overnight. This ensures that the texture and flavour of the meat is perfectly preserved.

To remove the hard shells before cooking, there are a couple of easy methods:

Simply use a pair of scissors to cut along the underside of the scampi to remove the digestive tract, then peel the flesh away from the shell.

Or, remove the head and crack the shell by pressing your thumb right above the legs. Remove the legs and then gently peel off the shell. To loosen up the shell, gently bend the scampi against its curve.

Now get creative with your cooking!

If you’re feeling adventurous, try eating them raw with a delicious dipping sauce on the side. The possibilities are endless! Check out some of our recipes.
